This model practice outlines how the Multnomah County Environmental Health Services in Oregon addresses food borne illness transmission prevention and intervention.  The overarching goals were to:

  • have a comprehensive integrated food safety program that successfully focuses on both prevention and intervention of food borne illness
  • improve the infrastructure for food borne illness surveillance in Multnomah County
  • develop a food handler training program for persons who are functionally illiterate, including limited and non-English speakers.
